Southwest Cheese operates a dedicated processing facility in Clovis, New Mexico, that is responsible for the production of 450 million pounds of superior style American, Cheddar, Monterey Jack, Pepper Jack and Colby Jack cheeses. Our cheeses are made from the freshest local milk, and shipped out to a number of nationally-known and international food processing companies for packaging and resale.
